Maak de coulis zelf op basis van passievrucht en vodka:
Ingredients
200g Passion Fruit Puree
40g Vodka Vanilla
20g Sugar / Glucose
6g Emulbinder - New Tex
Preparation
Weigh out vodka, sugar, passion fruit and mix together. You can also use dextrose instead of sugar. This dissolves very nicely and is slightly sweeter than sugar.
Warm to 37 °C.
Add Emulbinder and mix until you obtain a nice coulis.
