Sauce-Espuma Shrimps with Sauce-Espuma Mousseline

Ingredients

Preparation

  1. Wash the cherry tomatoes and put them in a baking dish.
  2. Add pepper, salt, olive oil and thyme.
  3. Bake until tender in the oven.
  4. Heat the Sauce-Espuma Mousseline au bain-marie.
  5. Prick the shrimps on a skewer and fry until tender.
  6. Place the oven baked tomatoes on a plate and top with the shrimps.
  7. Finish with Sauce-Espuma Mousseline and Corn-Panko Kimchi.
