Ingredient

  • 60g soy sauce
  • 120g dashi broth
  • 20g rice vinegar
  • 8g Emulbinder

Preparation

  1. Reduce all ingredients to the desired thickness.
  2. Leave to cool.
  3. Cook the aubergine
  4. Top with lakkage and Rice Crispies Dashi, Rice Crispies Citrus, Crunchy Lentils and Crunchy Buckwheat.
