New Tex Ganache

Ingredients

  • 250g cold milk
  • 8g Agar+
  • 300g dark chocolate
  • 100g Palatinose
  • 400g cream 35%

Preparation

  1. Heat milk and Agar+ to 80°C.
  2. Add dark chocolate and Palatinose and mix 1:30 min at room temperature.
  3. Add cream and mix 1:20 min at room temperature.
