New Tex Christmass Ball

Ingredients

  • Glass bulb
    • Isomalt - New Tex
  • Crumble Brazil Coffee - Frozen Element
  • Cocktail-Foam Pornstar Martini
  • Passion fruit & vodka coulis
    • 200 g passion fruit puree
    • 40 g vanilla vodka
    • 20 g sugar
    • 6 g Emulbinder
  • Sour cream
  • Yopol
  • Crown of a bauble
  • Crumble of Pain Turc - Didess

Preparation

Glass bulb

  1. Heat Isomalt to 180°C.
  2. Allow to cool to 160°C.
  3. Fill a ball mould and pour out the excess mass.
  4. Allow to harden for +/- 15 to 20 minutes.
  5. Carefully demould the spheres.

Passion fruit & vodka coulis

  1. Mix vodka, sugar and passion fruit together.
  2. Warm to 37°C.
  3. Add Emulbinder and mix to a nice coulis.
  4. Put into a piping bag.
