Ingredients

  • Hazelnut Cremeux
    • Caramel
      • 65g sugar
      • 80g cream 35%
    • 75g Natural Paste Roasted Hazelnut
    • 3g salt
    • 2g Gelatin Powder
  • Crumble Brazil Coffee - Frozen Elements
  • Cocktail-Foam Pornstar Martini
  • Passion Fruit and Vodka Coulis
    • 200g passion fruit puree
    • 40g Vodka Vanilla
    • 20g sugar
    • 6g Emulbinder
  • Crunchy Nuts Hazelnut

Preparation

Hazelnut Cremeux

  1. Heat the cream.
  2. Caramelise the sugar and deglaze with the warmed cream.
  3. Add salt and Gelatin Powder to the hazelnut paste.
  4. Add this mixture to the caramel and leave to cool.
  5. Mix together.

Passion Fruit and Vodka Coulis

  1. Mix vodka, sugar and passion fruit together.
  2. Warm to 37°C.
  3. Add Emulbinder and mix to a nice coulis.
  4. Put into a piping bag.
